Azahar Panama

The verdict
A seventh-floor room behind a flower shop, with a backlit bar, windows over the bay, and a kitchen good enough to deserve them.
You reach it through a working florist, which sets the tone before anyone brings a menu.
Across two visits the small plates were the more consistent half of a very long list, and the mains, while good, were the ones we had notes about. Service was quick and well paced both times, with the gaps between courses judged about right.
Skip if
- You want a short menu. It is gigantic, and we struggled to choose on both visits.
- You are counting on every dish landing. The scallops tiradito felt like it was missing something, the ravioli was good rather than memorable, and the escargots came with more mushroom than escargot.
Would we go back? Yes, and we already did. We would order the stuffed dates again.
The visit

Speakeasy at the front, supper club once you are in
You reach it through a working florist on the seventh floor. Inside: a long backlit bottle wall under three low black pendants, and a bar you could happily spend the evening at without ever sitting down to eat.

You arrive through a flower shop
Reception sends you to the seventh floor. The lift opens onto a florist, and the woman behind the counter points you through it. There is no sign and no door - just flowers, and then the room.

Order the Oaxaca Memories
A mezcal cocktail that arrived five minutes after we asked for it and was good enough that we ordered it again on the second visit. The tequila-based Nostradamus is the other one worth knowing about.

The windows do the rest
Seven floors up on Avenida Balboa, with the city on one side and the water on the other. We came in the late afternoon and the light was the reason we kept looking up from the table.

The wagyu nigiri is the one to order
Seared, with foie gras on top, and it needed no soy sauce at all. The tuna and edamame cream nigiri beside it was delicious too, but that one did want a dip.

The pork belly, shared between us
Potato puree and kale underneath, and a sauce that was good with it. Lots of different textures, which is what made it worth sharing rather than ordering one each.

The Beef Wellington, and a lesson
Genuinely excellent, and a mistake after six appetisers. It is a heavy dish and we could not finish it. Order it instead of the small plates, not after them.
